Banana Bread Brownie



                                                          Banana Bread Brownies 

  Ingredients:
Banana Bread Bars:
1-1/2 c. sugar
1 c. sour cream
1/2 c. butter, softened
2 eggs
1-3/4 c (3 or 4) ripe bananas, mashed
2 tsp. vanilla extract
2 c. all purpose flour
1 tsp. baking soda
3/4 tsp. salt
1/2 c. chopped walnuts (optional)

Brown Butter Frosting:
1/2 c. butter
4 c. powdered sugar
1-1/2 tsp. vanilla extract
3 tbsp. milk

Directions:
1. Heat oven to 375F. Grease and flour 15x10-inch jelly roll pan. For the bars, in a large bowl, beat together sugar, sour cream, butter, and eggs until creamy. Blend in bananas and vanilla extract. Add flour, baking soda, salt, and blend for 1 minute. Stir in walnuts.

2. Spread batter evenly into pan. Bake 20 to 25 minutes or until golden brown.

3. Meanwhile, for frosting, heat butter in a large saucepan over medium heat until boiling. Let the butter turn a delicate brown and remove from heat immediately.

  4. Add powdered sugar, vanilla extract and milk. Whisk together until smooth (it should be thicker than a glaze but thinner than frosting). Using a spatula, spread the brown butter frosting over the warm bars (the frosting will be easier to spread while the bars are still warm).

Weekend Report...

                                                     All it does is rain around here...

Rain was forecast for this weekend so I wanted to cut grass Friday when I got home to try to stay ahead. No such luck...it rained just enough Friday to be too wet to cut. Great...

I just had to put out Weed & Feed the week before and now it's raining. So, what's the problem you may ask?

Have you ever put out Weed & Feed on your lawn and it rain and you are not able to cut it when you plan? This stuff takes seven days to kick in. The result is tall, thick grass...

What's wrong with that?

You wind up having hay bales instead of nice green cut grass. You can hear it grow...

Bwahahaha!!! Hear me grow and you can't cut me Bwahahaha!!!

I hate this time of year...stupid rain, stupid grass, stupid rain coats and rubber duckies.

I was planning to do something today... but I haven't finished doing nothing from yesterday yet.

The first day of Spring? I think not...

The weather around here, in a word, is not Spring like. Far from it is what I say. Snow has been forecast for the next three days. Now...around here that can be hit or miss. More miss than hit...

But, needless to say it is still cold and rain abounds in our neck of the woods. I did some Spring cleaning outside yesterday and my back paid the price last night. Today, it feels better but I must realize that I can't do things that I use to. True, I'm only 55 but I am no spring chicken anymore.

My mind says yes but my body says no. And I think my body won that round hands down. Or should I say Back Down! Ouch...Holy Mother of...

Pain is not my friend. I had a bone spur in my right heel that gave me fits for weeks. Two shots and a few choice cuss words later it seems to be behaving. But my back has been injured  before and it reminds me of my age and my durability of doing things has long past its prime.

My mind, on the other hand, says get it done. My back says screw you and the horse you rode in on.

So...I will get done what I can to please my mind and my back so that my house won't look like Trailer Trash Charlie's Emporiums. That will keep me happy, my mind happy, my wife happy and my neighbors happy and my back from going on strike for the next six months...

New Recipes...

I'm going to post a few recipes today.

The first one is Banana Nut Bread. I love this stuff. I could eat this with ice cream 3 times a day for life and never get tired of it...

BANANA NUT BREAD
½ cup shortening
1 2/3 cup sugar
3 ripe bananas, chopped
2 eggs
1 ½ teaspoons vanilla
2 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup chopped pecans
½ cup sour cream
Powdered sugar
In a mixing bowl, mix together shortening, sugar and bananas. Add eggs and vanilla; mix well. In a separate bowl, mix flour, baking soda and salt, then add to the banana mixture. Stir in the pecans. Fold in sour cream. Grease 3 small (8-X 3¼-inch) loaf pans, and dust with powdered sugar. Bake at 345 F for 30 to 45 minutes or until a toothpick comes out clean.

Next up is Texas Salsa:

TEXAS SALSA
1 (16-ounce) can black eyed peas, rinsed and drained
1 (16-ounce) can black beans, rinsed and drained
1 (11-ounce) can niblet corn, drained
2 cups diced tomatoes
1 cup chopped onion
1 cup chopped green or red pepper
1 (16-ounce) bottle of Italian dressing
1 tablespoon chopped cilantro (optional)
Salt and pepper to taste
Mix all ingredients together and chill for 3 hours or overnight. Serve with tortilla chips or FRITO scoops. Note: If tomatoes are juicy, less dressing may be needed to coat mixture.

Next up is Frogmore Stew:

FROGMORE STEW 8 to 10 ears sweet corn, cut into 3- to 4-inch pieces
4 pounds small potatoes
6 medium onions, quartered
3 pounds shrimp
2 to 3 pounds Polish sausage, cut into chunks
1 package crab and shrimp boil
Place corn and potatoes into a large stock pot. Cover with water and add crab and shrimp boil. Boil just until potatoes begin to get tender. Add onions, shrimp and sausage. Boil 5 more minutes, then drain off water and transfer to platters to serve.

And up last is Cowboy Beans:

COWBOY BEANS
3 (15-ounce) cans pork and beans
1 pound ground beef, browned and drained
1 bell pepper, chopped
1 onion, chopped
1/4 cup brown sugar
1 (15-ounce) bottle ketchup
1/2 pound bacon, cut into small pieces
Add first six ingredients to a 9- X 13-inch baking dish and gently combine. Top with bacon, and bake at 350 degrees for 1 hour.

Not the Weekend Report...

Well...it's a new day with a new set up. I'm not sure how this will end up, but once I start playing with the template on this blog I will figure it out. Hopefully...

So you might say "What's going on B.D.?" It's just me playing with the controls...about to play chicken with the monster called technology. Which...by the way...as I have said before, I am the last of the dinosaurs and this ole boy ain't dumb but I ain't up on all that stuff.

 Now yes...I'm not the best speller nor am I a whiz at a lot of things, but I don't give up easily. I'm not very computer savvy, I'm not the brightest bulb in the package but I try...make it or fail...I try.

Sometimes I must admit defeat and move on...my brains not what it use to be. But...I try.

You may have noticed that my links are gone. You can go to the bottom of this page and click on My Profile and it will show you my other blogs. I will add this to the list of things to fix.

I'm learning all over, so just hang in there until I get back in the saddle again or until I throw this computer out the window...

...whichever may come first is any one's guess.

Back Again???

Well, I've been told (yes told) that I need to get off my duff and start writting again on this blog because they miss me!

Weekend Report...

Once again, I have found myself slowly walking away from this blog called MacDaddy's Grill.

Why is that? you ask...

Simply because I think I have reached my limit for writing recipes and telling stories and trying to be funny. Tired of trying to be a reporter, a comedian, a voice, and a writer and a teacher. I know my readership has fallen way off in the last year because of my lack of writing...that's no body's fault but mine. I know a few of you still check back from time to time and I truly do thank you for that.



The Grill may never be the same because her heartbeat has grown weak, her soul has drifted and her Captain has fallen into a deep sleep...

Some profound thoughts today:

No matter how you make a living or who you think you work for, you only work for one person, yourself. The big question is... What are you selling, and to whom?

Money makes life easier only when it’s yours free and clear. The stress of financial debt can change a person.

The fewer possessions you own, the more you will use and enjoy them.

When you stop chasing the wrong things...you give the right things a chance to catch up to you.

This & That...

I know it has been a long time since posting. I do apologize for that. Things have changed and it seems that new technology has passed this old boy by.

I'm not all "up to date" on tech toys of the modern day and time. I still struggle...

Blogger has a new format that I'm not that keen on or up to date with. So, I have been slack on posting to the Grill because of this. It's not that I don't want to...its just that I'm a little...lost.

But, I will come back and play with it again and see what I can do. It took me a few years to get Macdaddy's Grill the way I wanted it. And every time I get comfortable with it they change the posting to some other format so I have to learn it all over again. I don't mind learning new things but sometimes it can be a pain in the butt...

But I'll try...

Weekend Report...

Yes, it has been awhile. To get caught up, the new AC unit was installed and the new replacement windows are in. We can tell a big difference in the inside temperature now.

You would think that a house being only 7 years old, you would not have to do these things...

But, it had to be done. We should be good to go for a long time on these two things. Next on the list, will be to replace the gas water heater. Then comes painting the inside of the house.

New landscaping is also on the list. What I have right now, I just can't keep up with it, not the way I'm working right now.

Sorry I haven't been on the Grill in awhile. I'll try to do better...

I have never seen (or can't remember) seeing such wild weather around here. It seems that the Northern fronts and the Southern fronts are playing war games right over the South Eastern part of the woods. We do have a saying around here, "If you don't like the weather, stick around, it'll change."

Simply Friday...

The weather around here has taken a roller coaster ride lately.

Hot
Cold
Hot
Cold

Windy

But...at least it ain't Winter anymore. I'm trying to get some things done around the house from my To-Do List, and I have added a few things to my Done-List.

But, it's a never ending deal when you own a home. That's one reason I liked living in the apartment. No work, all play...

Well, you do have to keep the inside clean. But the only work I did outside was lay by the pool and drink a few cold libations. Oh the life of a working man.

But having a home is a lot of work. Cutting the grass, landscaping, doing something all the time. No rest for the working man...

I did some yard work yesterday and I'm sore as hell today, but I have to push through it and cut the grass again before Sister Rain comes to the party again.

No rest for the working man...

This & That...and a few other things.

A quick update before I get into the body of this post.

New AC & Heating split unit is installed and running. That's good...that weekend it was 90 degrees. Today, it's mid 40's. Only in Tennessee...

New replacement Vinyl Windows are measured and on order and should be here in a few weeks.

Yes...I spent some mega bucks for these two home improvement updates. But, it was a necessary evil that had to be done. So...these two upgrades should save me some mega bucks on heating and cooling.

Put it this way, I spent more money on these two items than I have spent in a lifetime on beer and grills. And I've gone thru some beers and grills in my lifetime.

So...these upgrades were not cheap. And I've always said, you get what you pay for. I bought the top of the line equipment...and...they are made in the USA!

Can't beat that...


So...as I spent a lot of my hard earned money I thought, I need to find a classic beer budget recipe and put a champagne twist to it. To celebrate my short lived growing bank account...I found the perfect one.


Caviar Deviled Eggs

Ingredients

6 hard cooked eggs

1/4 cup mayonnaise

1 tablespoon prepared horseradish

1/2 teaspoon dill weed

1/4 teaspoon ground mustard

1/8 teaspoon salt

dash pepper

1 dash Paprika

6 teaspoons caviar


Preparation method

1. Cut eggs in half lengthwise. Remove yolks; set whites aside.

2. In a bowl, mash the yolks. Add mayonnaise, horseradish, dill, mustard, salt and pepper; mix well.

3. Pipe or spoon into egg white halves. Sprinkle with paprika. Refrigerate until serving.

4. Right before seving, top with 1/2 teaspoon of caviar on each egg half.

Weekend Report...



Here it is April 10th and the weather is geared for summer already.

Today: Mostly sunny, with a high near 90. South southwest wind between 15 and 20 mph, with gusts as high as 30 mph.

90? ...In April?

Ah...yep. 90...

These South winds just bitch slapped Old Man Winter and told the old boy to take a hike. That would fine with me but can we start with some 70's please?
