Mid-Week Report

Are you feeling it yet?

Fall is in the air...

The trees are starting to turn beautiful, the flies are gone, (almost.)

Woo-Hoo... fall is here, meaning cooler temperatures, the yard work slows down, ( again... almost) it is time to get caught up on the "to do list"... time to unwind from the long summer months...

Time to relax...
And reflect...


And plan for next year.

I need a vacation...

Weekend Report

It has rained almost all weekend, so last night we had a country dinner of mashed potatoes, fried okra, pinto beans and corn bread. I grilled some chicken thighs tonight with fried yellow squash and green beans. I got the grass cut yesterday between thunder storms and it may be close to the final cutting of the season.

I still have to trim the shrubs again and may try to get that done next weekend if the weather will cooperate (if we don't get a flood again)

My 'to do list' is becoming shorter, maybe one day I'll be done and I can enjoy a weekend without having to do any work, (wishful thinking)

I've also got to say "Hi" to my girls, since I haven't done that in awhile, so...

"Hi girls."

We are open...

What a week... we went to central Florida for vacation, it was the usual, hot and sticky weather down there and these bugs called 'love bugs' were everywhere. They say they come out twice a year. They won't hurt you, but they are a major pain in the rear when you have a wife & daughter that don't like bugs.

They should sell fly swatters, they would make a fortune. I should sell barbecue down there, I would make a fortune, for the price charged for some things to eat, (which wasn't that great by the way...) if I had a barbecue shack down there, I could make a fortune 3 times over.


I have been looking around for some property up here to buy and set up shop, but everybody wants a million bucks.

I haven't won the lotto...yet.

It's good to be back home, but there is some rough weather hanging around our area this weekend, tornado warnings have been out since yesterday and flash flood warnings too.

It has rained a good bit here since yesterday and much more is expected today and tomorrow.

So just keep an eye on the weather channel and be safe.

Life is good...

Weekend Report

Macdaddy's Grill will be closed next week...

As we (myself and my faithful employees) are on vacation. Take this time off to look into my archives for some great post and some great recipes.

We will return next Friday and I will tell you all about our week off. Don't do anything I wouldn't do, be safe and drink one for me.

Just in time...


Talk about luck, I cut the grass yesterday because Monday, it will be aerated and re-seeded. I cut it low this time, so the bare spots would be easy to see. I got done, took a shower and settled down for some football and a cold beer when I heard something outside getting louder by the minute. I looked out and it was pouring down rain and the sun was shining! It did this for 30 minutes...good thing I got the grass cut, but my neighbor, well let's just say he procrastinated.

Labor Day ( part II )

Folks, let me tell you...

I see why people develop a love for cooking barbecue. It's the smell and the great results that comes with that love.

You can't beat the smell of smoke and 'cue. Steaks smell great on the grill and so does chicken or hamburgers, but to smell that wood smoke for barbecue... it gets in your blood.

This weekend has been all about the smoker, ribs and Boston butts. A lot of time has been spent watching the temperature gauge and keeping up with the hours. But the smell of that smoke and 'cue, will win out every time over the long hours.

Yes... it is a love, a well founded love for the art, and the time consumed in cooking barbecue. For 3 days, I have fostered that love. A good love for steak is great, but barbecue, is the heaven on earth kind of love.

You can't beat that smell...
And the reward for your hard work and long hours...
Is priceless...

Labor Day...

There's nothing like a three day weekend, but all I have been doing is cooking! This, kind of reminds me of Memphis... I love it.

Saturday, I smoked some ribs for about 4 hours and did some grilled hot wings. Sunday, I smoked 2 Boston butts, weight totaling 14 lbs. I smoked them for 6 hrs. at 225, then double foil wrapped and cooked at 225 for 2 1/2 more hrs. Total time in the smoker, 8 1/2 hrs.

I let the internal temp. of the meat reach 200 degrees and held it there, as they were about to go rest in the cooler for awhile. I let them rest for 1 1/2 hrs. in the cooler, the thermometer was still reading just a hair under 200 degrees. They were ready to go, so they got pulled and man was it good... It was worth the total 10 hr. effort.

Today, I will do some more ribs for some folks at work tomorrow and I may give them just a tad of pulled pork, just to tease them ever so slightly...

And yes...I did take pictures this time around, I'll post them later this week.

Weekend Report

I came home yesterday, jumped on the lawn mower and cut the grass, so that's out of the way this weekend. This afternoon the ribs will go in the smoker and so will the baked beans.

Tomorrow, Boston butts will be in the smoker for pulled pork. And Monday, more ribs will go in the smoker to take to some folks at work Tuesday.

So it's a smokin' weekend and the weather is perfect for cooking outdoors.

Be safe this Labor Day weekend and fire up those grills!!

My grill will rest this weekend...it's the smokers turn to party. Woo-Hoo!!!
