Watched Tennessee get their butts handed to them again yesterday...

Vandy may be the team this year.

They have finally gained some respect here at home and have become the subject of football talk... instead of the brunt of football jokes.

I hope they do well...as for Tennessee...the quarterback has got to do better or hit the road, just like the Titans did with Vince Young. Parked his rear end on the bench because they were tired of becoming the brunt of jokes in the NFL...

It worked...

Simply Monday...



I had to take my big black bear to the Vet.

She has a problem with her right paw that will require surgery. She hurt it somehow last week and has been in pain because of it.

She is my shadow and my other child by adoption...

The house is empty without her...

I miss my Sweetie dog...

But...this should take away her pain. We love our kids (even when they test our love)

A dog is different...they love you the same...day in and day out...no matter how bad your day was, they greet you the same everyday when you come home...with a cold nose and a wagging tail.

They are happy to see you walk in the door...

God...take care of my black bear.

I don't know if I could face the world or my job everyday without her being happy to see me when I come home.

Weekend Report...



I cooked, 6 racks of ribs, some beef short ribs, brisket and Boston butt with smoked beans.



The ribs and the smoked beans were great...



I pulled off the brisket and butt, double wrapped them in foil and put them in the cooler to rest before pulling and slicing....

In the mean time...we stuffed our face.

With my belly full of beer and ribs, I was content to take a short nap (been up since 4am, it was now around 8pm) before taking care of the other meat. I told Julie to wake me in an hour (which she did) and I said the hell with it and stuck them both in the fridge to be dealt with tomorrow...I was going to bed.

So...

They got sliced and pulled this morning.

Note to self: Self...next time...do this when the meat is still hot...then go to bed with a belly full of beer and ribs.



I did some grilled pork chops awhile back and just now getting around to posting the picture.

Sorry...

Got to go clean up the pit and cut grass.

I got a Boston butt and a brisket today and will pick up some ribs this afternoon. Julie wants me to get the brisket up to my level of magic that I do...

I've only cooked two so far. The second was better than the first. Brisket takes awhile to get used to cooking...but I'll get there...

Weekend Report...

I could get use to this being off on Friday, Saturday and Sunday. Working 10 hour days has its moments...but life is a trade off sometimes, you must give something up to get something else in return.



It gives me more time to experiment on cooking during the weekend and enjoy a cold libation or three...as I kick back and relax and forget about work.

Cooking is my therapy...

In return for the 4-10 hour days...I had to make a sacrifice of not bowling with my lovely wife Julie on Wednesday.

So sorry darlin'...


But on another note, I'm already starting to get orders for cooking barbecue to sell.



That's been a goal for a long time. I have the pit. My bro-in-law is going to help put a roof on the trailer to cover the pit and firebox from rain.

Right now...me and 'Big Mama" are at the mercy of Mother Nature.

When some folks wanted me to cook for them, I had to reply, "it depends on the weather." You don't get much business that way.

Word of mouth has worked well for me as people have sampled my 'que and have become interested in placing orders.

I finally came up with a price list and I've got a 90 dollar order for ribs next weekend. Things are slowly falling into place.



Hopefully...I can enter some competitions next year as well and build a reputation as one of the top cooks in local KCBS competitions. In a few years, we'll start going out of state to compete in some contest.



Things are coming together...one step at a time.

Oh my Gawd...Monday.

What can I say...

Things did not go well, for the first day of a 10 hour shift. Stupid people do stupid things.

It's just a fact of life...

Stupid is...as stupid does. It's a wonder this company is still in business. I mean really...

I only have a high school education...but damn...I'm smarter than most of the morons in this business...and that's pretty sad.

No wonder this country is in trouble. The trouble with people in power is, they're either greedy or totally stupid. And it is double jeopardy when they are both greedy and stupid and calling the shots...

But what the hell...why should I care as long as the check don't bounce.

I can't stand stupid people in the upper echelons of society that think they are God and I have an even smaller tolerance for greedy stupid people in the upper echelons of society that think they are smarter than I am.

A three year old...can make better decisions than these idiots.

That's just my two cents...

Today was a waste of time. Tomorrow? Hell...this is better than any soap opera drama on TV.

I might even take some popcorn to work tomorrow just to watch the show...

Weekend Report...



Not much going on this weekend. I still have some work to do outside, but besides that...just taking it easy watching some college football.

Work...will change next week, as I go to a 10 hour shift, but I will be off on Friday, Saturday and Sunday of every week.

Woo-Hoo!!! But...that might not last long...hell...who knows about anything anymore...

Just smile...tell the boss, screw you... (always say it with a smile) and hope the damn check don't bounce...

Might cook something tomorrow.

Simply Thursday...

I have received some sad news from one of my former team mates, (Co-Captain of Peg Leg Porker) the man I was paired with to be his fire tender cooking barbecue, Dave Johnson.

His mother, has been very sick for many years and she went to the Lord on her final day on earth.

Dave, is a sweet heart, a very fine man, with a heart of gold. This has been a very trying time for him. Dave can be scattered brain sometime (I kept him focused) but this man is pure gold when it comes to his heart...

We all...are touched by a death of a loved one...

Our father or mother, sister or brother, aunt or uncle, husband or wife, or anyone in the family...

I won't tell you what I went through with my dad.

We all think, that our parents are super human and when death comes into our world, it rocks our very soul. But we go on...that's what they would want, not to grieve, but to live and remember...

I'm sorry for your loss my friend...

I never met her...but she was a fine lady...you turned out just fine.
