Got home and cut the grass because it is supposed to be a downpour again this weekend.

Well...no cooking again. I should rename this blog...Sorry Life Sucks, Weather Sucks.

And I'm working 12 hour days as well.

Happy B-Day...



Yes, it is that time again...

A very lovely lady and one half of the original Big Daddy's Girls has a special day today.

My lovely, my girl, my sweetheart of an angel and one of the most loyal readers from the beginning of MacDaddy's Grill and a women with a heart of gold...Vicky...is the birthday girl of the day.

Now as you know, according to Man-Law, we are not allowed to say or comment about a woman's age, shoe size or any other size that has a number attached. But I will say with no fear of having my bollocks cut off that it rhymes with ----- ---.

So from all of us here at MacDaddy's Grill, Happy B-Day Vicky.

You know how much we love you and care about you.

And yes Tracy...we still love you too!

This & That...



Rained this morning, but all is quiet right now. We are supposed to get some very rough weather today and by looking at radar it's on the way.

Maybe they will get the Music City Marathon over and done with before it gets here. Strong storms and possible tornados.

This should be a fun day...

We need rain. The trees all bloomed out at the same time and pollen is on everything.

Red Wasps are everywhere and flies are making their return.

Great...


We kill a fly down here and ten more will come to the funeral. And they know how to piss you off better than anybody...

They know when you're about to cook outside (they have scouts and spies) and if you try and reclaim your territory, oh it's on brother...they get out their little cell phones and get busy dropping a dime for help and bring in some muscle to pester you beyond belief.

...and you're like trying to protect your beer and grill and food and face and ears and arms and...

It's a mind game. I've sent so many of them to Hell that I'm now on their Wanted Poster:

Simply Tuesday...



I got an order for 2 gallons of BBQ sauce from one guy.

I'm like Holy Mother of...

Hey, when you got some good stuff...why complain. I'm feeling better and after an order of 2 gallons of BBQ sauce from one person...my wallet's feeling better too.

The sauce has really taken off. Last year I probably made and sold 15 gallons of sauce. I've got many people that order a gallon at a time, some order a quart and some a pint.

My thing is consistency...

Julie says I'm anal about it when I make it. Well, anal sells my stuff because people want it and anal is not bad when you have to be consistent.

Sex sells...and so does a damn good recipe for some damn good BBQ sauce.

Who am I to complain about that?

Weekend Report...

Cut grass yesterday. Went and got a LP tank filled and tried out the new Weber gas grill. I think I'm going to like this one.

So the Holland is gone. A bro-in-law is going to take the Charbroil.

I've also got a friend's husband coming to trim the landscape and clean it up, move some shrubs and get rid of some. I'll do the mulching after that. There's just no way I can do all this by myself...not this year anyway.

Robyn has ball practice this afternoon and I have to take her, so today will be a lazy day. I hate to start something and then have to quit.

So just a little R & R today. I think 12 hour shifts are the menu for the next week as well...

Simply Thursday...



I will post a recipe from Paul Kirk.

A very famous man in the world of cooking and KCBS and who also has a restaurant in New York called Rub. And a man that actually posted a response on my blog a few years back when I was on the BBQ thread The Front Porch which was run by Garry Howard who also runs The Smoke Ring hub web sites.

I learned a lot from the folks that were on this site. This is really what started my passion for making real barbecue. Folks from all walks of life talked about cooking barbecue. From competition cooks to weekend warriors, to chefs, to everyday folks.

The information they shared and techniques they shared was bar none.

So enjoy this recipe from the man himself...


Honey Jalapeno Marinade

1 cup canola oil
juice of 2 limes
1/4 cup clover honey
6 large cloves garlic, pressed
1 jalapeno seeded and minced
1 Tbs dried oregano
1 Tbs sweet paprika
1 1/2 tsp kosher salt
1 tsp ground black pepper

Combine all in zip-lock bag and mix well.

Marinade beef skirt steaks, beef iron steaks, round roast, beef kabobs or chicken thighs or breast or whole chicken for 1 or 2 hours

Cook on grill until done and enjoy.

Weekend Report...



I nailed on the fence until my shoulder gave out...

What?

Of the many things on my To-Do list, this has top priority. The wood fence enclosing the back yard is five years old and some of the nails holding the slat boards are rusting through...thus making the boards come loose.

So I'm re-nailing the fence. Six nails per board, fourteen boards per section.

Needles to say, that is a lot of nails and hammering. But yesterday was pretty much hammer until you run out of nails. I hammered five pounds of nails and called it a day.

I'm being careful with the rib and I can tell it's there, but things must be done and I just can't lie around. I could use some help, but that won't happen, so I'll just do what I can when I can. Robyn will have ball games starting soon and many other things going on, so it will be a long summer.

Today, I'll fire up the motorized billy goat and cut grass and then try to finish up the back side of the fence. Next week at work is 12 hour shifts again.

Yea...12 hours of glass dust, noise and headaches...for joy for joy.

This & That...

A little cool this morning but we get back into spring like weather this weekend and next week.

Most of the time, we don't get to enjoy the 70's, we go from 30's to 60's to 80's to muggy and miserable. We rarely get to enjoy a few days of mild 70's weather.

But for the next few days that's what we get...

I'm headed out to try and get some yard work done.

Work has already said: 12 hour shifts next week. Great...here we go again. Hire people, run a third shift instead of trying to work two shifts to death.

Well...

I won't get into detail about the Kings of Stupid.

I've been down that road a few times. But here we are, working like sled dogs during the week and busting our rumps on the weekends to get things done around our homes.

We're out cutting grass...they are out playing golf. We have to give up plans during the week working 12 hours...they are at home, not cutting grass, watching golf on TV.

There is something wrong with this picture...

Wordless Wednesday...

Well sort of...

I must apologize to you my readers for not writing more than I do. I know, you look forward to reading what I have to say and are disappointed when I haven't done anything or made any updates.

So I'll just say it like it is...

I would love to tell you I'm cooking this or doing that or this or that has happened...but alas...I can't. You see, I'm not cooking much.

I'm doing what I can when body will allow me to do things...which is not much at the moment.

This...is a downer to say the least. But I do what I can for the time being. I'm not in pain anymore but I must be careful in what I do or my recovery will take that much longer.

I don't want to write everyday about this and bore you to death by running this in the ground. It's not terminal, but it has slowed me down by great lengths as being a thorn in my side. And it has shown me, I'm not Super Man anymore.

So...just hang with me. I'll get over this and the total BS at work. I'll get back in the groove and we'll have a few laughs and get back to our old selves and enjoy life once again...

Simply Saturday...

I got a few things done yesterday. I got my truck bed sprayed at Line-X and it looks great. Second, I put the Weber E310 gas grill together that has sat in the box in the garage since last Sept.

My Holland grill is shot after 7 1/2 years of constant service. My Charbroil gas grill will disappear as well. The Weber E310 will take over...

This will leave me with one gas grill, two Weber charcoal grills, the WSM charcoal smoker and the Smokey Mountain gas smoker. And of course the pit...

Why do I have so many cooking toys?

The gas grill will always stay at home. The charcoal grills and smoker are for home use or competition (if I ever get to do that again) the Smokey Mountain gas smoker is for home use when I don't feel like fooling with charcoal. And the pit, which is an offset charcoal-fired firebox is for big, big cooks.

Those kind of cooks that take all day, meaning I've got all of my chores caught up and I can play pit master all day.

And so...I get geared up to burn off the oil and maybe do something with the new gas grill today and low and behold...

It's raining...so I look at it like this. At least, it's not still in the box sitting on the garage floor. It's still sitting in the garage...but not in the box...on the floor.

That's one small step for me and one giant leap for getting a frigging huge box out of the garage. Next time I'll just buy one already put together and save myself the problem and hassle.



You know, people use to take pride in saying: Yeah, I put that together all by myself. Took me awhile but there it is.

I'm included in that group...


I've lost count of how many things (big and small) I've put together from a box that has 14 different label types of screws and bolts.

So many of type A, type B, type C, type D, type AA, type BB and so on. And there are pictures so there will be no mistake what-so-ever.



And...it really amazes me that no matter how much type A and type AA look alike, they won't intertwine and you figure out the instructions are wrong and you should be using type YY and you can't find them because you haven't bothered to dig into the box that far yet because you're supposed to be on page 1-not page 5 and you figure out that page 5 is really step one before you even get to page 1 and you tell your wife if I ever buy anything else I have to put together just shoot me and you finally get it put together 4 hours later and you say not bad for a white boy and you proudly show it to your wife and say look at what I did and she asks did you have any spare parts left over and I said not a one which meant I did something right in this little endeavor of a manual that had weird instructions and making this hillbilly say why the hell did I buy one in a frigging box that has taken up space and time when next time I'll buy one already put together or I'll shoot me myself for letting a thought enter my head of saying hey I can put that together no problem.


Was it hard to put together?

Nah...it was a piece of cake.
