Now...I have posted a rant on... i think of you as...

The 'Grill' is no place for that kind of thing. I try to have fun here...

But a few things have gotten under my skin, so I had to vent or rant or whatever.

The language I use is pretty strong, so I will offer an apology here and now. I do not apologize for how I feel or what I say, but if you are offended by what I said, I'm sorry...

But that is as far as I will go...this is my opinion & my two cents.

Weekend Report...

Posted below are some pictures of the third test run on the grilled hot wings. The color was good, the taste was excellent, all around good showing, except...

I'm not going to be able to use tongs to turn them, if you will notice the skin is broken on a few. I can't have that, presentation and appearance, as well as taste is everything. But, this minor little flaw can be worked out.

I also changed the hot wing sauce mix...just a tad.

Yes...Julie approved this change, we both think this will work better.

And no...I can't tell you what I did.

Not till after the competition...

And we have lift off...

I did a test run on the wings again today and they turned out great...
Julie said the sauce was a little hot, but that's the point...Hot wings.

The first test run sucked...this time was much better. I banked the coals to the sides of the grill with a water pan in the middle, worked out great.

On this deal with charcoal, I'm cooking blind, as meaning, I have no idea what the temperature is. I'm only going by looks. I cooked the wings for 50 mins. and let them rest for 10 mins. before adding the sauce. I added a little pecan wood for smoke...it was killer...

I'll do 2 or 3 more test runs before leaving for Memphis in May. For Julie...I have to back off the hot stuff, they will be only semi-thermonuclear next time.

"Dang honey..."

Oh well...at least she let's me experiment on her from time to time.

If only she would let me play doctor...

You also know, when I do good, I get kissed or smacked. But what you're asking for now, is way beyond the call of duty. As a B.D's girl you should know better...

Julie smacks me when I do good, but if I give a good recipe to this gal...and she likes it, will she want to smack me? Kiss me? Or whip me?

Or all three? I don't know if I can handle all that...I might like it.

Weekend Report...

No, I haven't forgotten about the Weekend Report...

I had to help Mr. Peg Leg yesterday, smoking some chicken for a fund raiser.

Pulled pork, beans, slaw, smoked chicken, as Carey would say...yummy.

Today, I have got to cut the grass. And maybe do a test run on these wings again. This time I will bank the coals on the sides of the grill with a pan in between. We'll see...

I have also talked with Henry and Carey (the two most trusted advisers to me in bbq) about buying a Lang mobile smoker. This is the one I'm thinking about.





Ain't she pretty? I have asked Lang to send me some more info on this cooker. She could be sitting in my driveway shortly...I'll let you know when the first cook is.

We can only say mere words to try and comfort your loss and pain...as many loved ones were lost from a senseless and selfish act by one person with problems only God can understand.

Our hearts are heavy and we cry tears of pain and sadness. For you, we can only offer words...these words will not replace what you have lost...

We can never take your pain away...
Only God can do that...

Our hearts, will cry with you...
You are not alone...we stand beside you in this time of grief and heartbreak.

Weekend Report ( part II )

Old man winter, just doesn't want to give it up.

But the weather gurus say the weather will be more toward normal next week. I hope so...

I have to help Carey with a cook next Saturday and I don't want to be carrying an umbrella around or lugging a parka because of cold weather & wind gust in excess of 25 mph.

Yesterday, was the biggest waste of my time I believe has ever happened. This company is being run hour to hour, I have never seen so much...

Sorry...I had to work today. It rained most of the day anyway, so it was pretty much a wash.

I "was" going to grill something tonight...But I'm pooped...worn out...

I barely have the strength to walk to the fridge and open a beer...

It was cold here, but that's part of life around 'these here parts of the woods.' We did have a hard freeze that weekend and some of our trees might not make it. But there is always a glimmer of hope that they will.

It's windy, cold, and just plain yucky...

So, no test cooking wings this weekend. Yep...4 days off and it has turned into January all over again.

Oh well...as I always say,

What the....

Oh my, boys & girls, the weather has made a drastic U-Turn.

Which is typical in Tennessee for this time of year.

I mean...wicked change, in a heart beat. 80 to 45.
(Whoa...that is a big change.)

But it ain't over...lows in the 20's... I have cut the grass 5 times already. It will slow down now for sure and probably stunt every tree I have blooming.

Easter Sunday...will be, let us just say...cold. Bundle up babe...the rabbit will be in a fur coat and ear muffs.

And of course, I'm off for 4 days...and the weather will suck and then some...

Oh simple Monday...

I have finally recovered from this weekend. I did a test cook on the wings Sunday. They did not turn out well...

So...I must revert to another method or a backup plan as you might say. They were not up to competition standards. But... I will overcome and prevail in the end. It will just take a little more practice...that is something I am very good at. Practice and more practice...

Also, on another note...I have to say "Happy Birthday" to my daughter Jennifer, who turned 16 today. Happy B-day Jenner!

(yeah I know...I said I wouldn't do anymore birthdays, but she's my daughter.)
