This & That...
It's still cold and windy around here. I have a hairline fracture in a rib that was fractured in a car wreck 30 years ago. That fall on the ice was hard enough to re-fracture it.
So to say that I am in a little pain is an understatement...
I hope this does not last all spring and summer because I really have a lot to do this year.
Hey B.D. just come up off some of them there George Washington's you got and pay somebody to do it.
To be honest...I may have to do that. I remember the last time I had fractured ribs. It took a long...long time to get over that. Almost two years...
And you have to be very careful because you get to feeling better and you re-injure it again...only worse...and you start the healing process all over again.
Been there...done that. You can keep that Tee shirt.
So just hang with me if I don't post a lot here for awhile. It's hard to find a comfortable spot to sit for very long, much less do any thing else.
I'm eating standing up (most of the time)
I'm sleeping on the couch sitting up
I'm trying not to cough or sneeze (but not having much luck)
No twisting or turning or bending or lifting
No playing house or doctor
No long road trips
And this will last awhile.
So I guess there will be no cooking or judging contest for me again this year as well. That makes three years of missed opportunities.
I know for sure my bowling career is now over with. Don't know what will be next on the list of "No Can Do That No More"
I guess I'll just take it day by day and wait and see.

Happy B-Day...
Pizza, Wings & Onion Rings...
Time to get your grill on...
Today in Tennessee will be the perfect day to dust off the cobwebs on the grill and fill the air with some fine smelling chow. Between cold, rain, snow, sleet, ice and howling winds, today will be 60 degrees, sunshine and calm wind.
Hot Damn!!!
You've got that right brother...
I'm still sore from my fall on the ice at the first of the week but that ain't going to stop me today. No sir, for 60 degrees and a chance to smoke something I'd have to be in a body cast to miss that.
So what's on the menu?
I think I'll fire up the WSM (R2D2) and cook some chicken thighs and beef short ribs.
Julie loves beef short ribs cooked that way and so do I. About 2-2 & 1/2 hours smoked at 225 to 250 and taken to an internal temperature of 170-175 degrees and these tough short ribs will melt in your mouth.
For those of you that don't have a smoker, you can take beef short ribs and put them on a grill on direct heat to brown and then move them off the heat to the cooler side of the grill for indirect cooking and finish them off.
Short ribs are just like beef brisket. They have to be cooked long and low heat. Cook them high and fast and they are tough as concrete. But cook them low and slow like brisket and you will not mind the time it takes.
So, today will be perfect. Tomorrow a forecast of rain...A one day reprieve from Old Man Winter.

Simply Thursday...
Sorry I haven't posted. We got some snow and ice Monday.
I didn't have any trouble getting to work...but I did have an accident in the parking lot at work.
I slipped...or more rather...my feet failed me and I hit the ground hard...flat on my back.
I will tell you, I'm hurt...
Feels like being body slammed by King Kong and kicked by a Mule at the same time.
I'm going to be hurting for awhile. Somebody said: The warranty is free until you turn 50. Then you start paying for it.
That's true...because my left kidney and my back hurts. There wasn't anything between me and the ground but air.
And gravity...
Let's just say...it works only too well against a 225 lb. 52 year old white boy.

This & That...
Well...
Here we are with the old again. Templates now a days for blogs are generic. No personal nuance. No...Hey this is me! Can you dig it?
Cold, impersonal, generic, and plain out right... Look at me! I suck. I have no originality.
That's not me...
So, I'll stay with what I have...
Maybe do some interior decorating...you know...a little paint here and a little there...
It's cheaper to buy some paint than try to rebuild the house that Big Daddy built.
So...
It's just you and me...and a bucket of paint...
And a song and a prayer...
And a cold beer or two...

Wordless Wednesday...
Well almost...
MacDaddy's Grill is fixing to go to the next level. Meaning, I'm fixing to change templates and change the look of this blog.
Now, everything you see, I have done on my own over the years. But I believe it's time to take her up...another notch.
So...
I do not know what the template change will do...or what will go away off of this blog when I make the change. It may take me awhile to get her back up to speed.
So just bear with me, as I steer this ship into a new direction.
This blog has been my sweetheart for many years. And she has taken on a life of her own.
Times change...friendships are made...hearts are broken.
The Grill...my star...will shine bright once again. She is my soul, my life and my love.
Cross your fingers and fasten your seat belt.
A new journey begins soon...

OK...
The whole world knows that the Saints won the Super Bowl.
Bully for them...
We were pulling for the Blue Team.
But, that's OK. I'm happy for the Saints. It was a very good game. I have watched the Super Bowl for years and years and this was a humdinger of a game.
Enough of that...
Brother, we have had some wicked winter weather and it looks like there is no end in sight.
But...
Julie told me to stop being so negative about things. She said, some of you might stop reading me because I am so negative about the weather.

This & That...
Are you ready for some footbaaaaaaall!!!
There will be no outdoor cooking at this house this weekend...
As a matter of fact, it may not happen for a few weeks because of the weather. So no tailgating for the Super Bowl.
Dude...that's so unfair.
I know...
The game is on Sunday and I just want to sit down and watch the game.
So, I'm not inviting anyone over to entertain or cook for, nor am I going anywhere. I have some dips and chips, some cold libations, and my favorite couch to watch the game.
If the weather was better and the game was on Saturday, I would offer invites and do some tailgating style eats.
Yeah!
But, this is not the case...

Baked Mexican Dip Recipe
2 10 oz. cans bean dip
1 lb. ground chuck
1 package taco mix
1 C. shredded Monterey Cheese
1 4 oz. can chopped green chilies
1 C. shredded Cheddar Cheese
4 T. hot taco sauce
1/4 C. chopped green onions
1 can black olives sliced
1/2 C. finely chopped tomatoes
Sour Cream on the side
Guacamole on the side
Tortilla Chips
Spread the bean dip in the bottom of a 9 x 13 inch pan.
Cook ground beef with taco mix as directed on package.
Spread over bean dip.
Top with Monterey Cheese.
Spread chilies over cheese. (to taste) Sprinkle taco sauce over chilies.
Layer Cheddar cheese. Bake at 350° F. for 30 minutes.
Cool slightly, add olives, green onion and tomatoes.
Serve with chips.
Quick and Tasty Shrimp Wedges
8 small flour tortillas
1/4 cup pesto
1 pound cooked salad shrimp
8 ounces shredded Colby Jack cheese
1 4-ounce can chopped black olives
Lay tortillas on Pam-sprayed foil on baking sheets.
Spread pesto over each. Layer shrimp, cheese and olives on top of pesto on each tortilla.
Top each with another tortilla and spray lightly with Pam.
Bake at 350 degrees for about 20 minutes or until lightly browned.
After about 5 minutes, cut each tortilla into 4-6 wedges and serve.
Cheddar Horseradish Spread
Mix 2 cups coarsely grated extra-sharp white Cheddar cheese, 1/3 cup mayonnaise, 2 tablespoons drained, bottled horseradish, 2 tablespoons finely chopped fresh parsley and 2 teaspoons Dijon mustard.
Chill.
Right before serving, stir in 1 ½ cups finely chopped or shredded radishes. Season with salt and pepper.
Onion Dip
Combine 1 cup sour cream, 1 cup mayonnaise, 4 ounces softened cream cheese, 2 tablespoons dried onion flakes, 2 minced garlic cloves, 1 teaspoon Worcestershire sauce, salt and pepper to taste. Chill at least 2 hours in the fridge.
Garnish with sliced scallions.
Hot Sausage Dip
Brown 1 pound bulk sausage and drain off fat.
Mix in 1 can spicy Ro-tel diced tomatoes and 1 (8-ounce) block of cream cheese and stir until cheese melts into hot sausage.
Beer Dip
Blend 1 package Hidden Valley ranch dressing mix (original flavor), 2 (8-ounce) packages softened cream cheese, 6 ounces beer and 6 ounces shredded Cheddar cheese.
Cover with plastic wrap and chill at least 2 hours.

Well as everybody knows, the big game is this weekend.
Who do I pick to win? The Colts...
But with the Saints playing, it should be a great game. One of the better Super Bowls ever played.
So...
What is on the menu?
To be honest, I really don't know yet. I don't think anything will be smoked because of the weather. Sister Rain is in town again. But you never know about me...
I have a few ideas floating around in my head. I have plenty of dips and chips, but I may come up with something outstanding munchies wise.
I always think better on my feet and I have visions of a good dip mix brewing in my mind.
The Lab Coat may come out...
I feel like I need to...to...to...
Fix some dang fine grub for our eating pleasure. Cold libations are a fact of life.
I just need to figure out something that would do these cold libations righteous ovations of smack your Momma lip smacking proud.

Simply Tuesday...
Yesterday was our 9th Wedding Anniversary.
Yes...
Julie and I have been married for 9 years. And we still love each other...
We have never fought or argued, we do have our disagreements like any married couple, but we have always made all of our decisions about life together. And even though, we sometimes need our space, we are always together.
Ah, come on B.D. tell us the juicy low down...
There is no low down...
Julie and Robyn are the best thing that ever happened to me. If I had to do it all over again...
I wouldn't change a second of it. And...I never will.
