Weekend Report...



We have three or four Humming birds in the back yard. Julie said, it took awhile to shoot this picture because they are such quick little bastards...

Got a lot done yesterday...trimmed up the hedge in front of the house, got almost all of the dead bushes out. Still have a ways to go, but it just got ahead of me this year...now I have to find a place to drop off all the stuff.



Grilled some chicken last night...supposed to go to a friends of Julie's for burgers today (I really don't know them that well) but I may pass, I've still got a lot of work to do and only 3 days to get it done.

I'm doing burgers & wings tomorrow anyway so...

'Big Mama" will sit this weekend holiday out. Like I said, I have a lot of work to get done and only 3 days to get it done in because I don't want to be doing this again next weekend...

Simply Tuesday...



WhiteTrashBBQ used my rub in competition on pulled pork and took 9th place...

This is an honor to me...but the credit goes out to these guys that cooked all night long.

Competition is very hard...you love to cook and you do the best that you can and hope your stuff is good enough to win. Barbecue competitors are some of the greatest folks in the world.

Husband and wife teams, good friends, buddies and beer drinkers.



It's all about fun and food...

I will say, I learned a lot being a fire tender for Peg Leg Porkers. But I evolved in my barbecue cooking and decided I could do better on my own. I will always be grateful for that time spent with the guys...

You must love barbecue to be in competition. It is a lot of hard work.

But love...comes easy when it comes to barbecue...

Low and slow...

Two simple words...just like...
I love you...(well...OK ,that's three words...)

Just like...I love beer...

Weekend Report...



Things were...very...very...good.

Except for the aggravation of these dang flies...

You kill one...and three come to the funeral. I give up after obliterating fifty of these pesky little bastards...I'm out numbered and out gunned.

I have worn out a fly swatter just tyring to keep them out of the garage and away from my beer...

As soon as they smell smoke..." Yo...Boys...Big Daddy's cooking...bring the in-laws..."

Next time, I'll buy a thousand bug bombs and line the driveway...with this line of defense...the little bastards don't stand a chance...

Might take out a few neighbors too...but at least I won't have to worry about some unwanted pest trying to raid my garage for free beer...

Working for the weekend...



'Big Mama' will come to life in the morning, as I throw on some baby back ribs, beef short ribs and chicken wings and fill the neighborhood with the smell of bbq.



I'm working on a gig to sell my stuff...

In other news...

Work...is in a word...killing me.

Cooking is my escape from the bullshit of everyday life...



I'll do the same thing as last time...preheat the pit with lump charcoal, then cook with pecan wood the rest of the way...

Should be some good eats.

Simply Tuesday...



I had sent some rub a few weeks back to

WhiteTrashBBQ

because I wanted an opinion from some one that was a KCBS Judge and a competitor of BBQ. Robert sent me a response yesterday that he used my rub for pulled pork in competition and came in 9th place.

I hope, this is a good thing.

To break the top 10 is always good, but I don't know his track record so I hope this is a good thing and not a set back for him.

I think I have a very good product and so do a lot of people that have been very honest about it with me. But I just had to be sure...

Robert does judging for competitions and competes (himself) out of Brooklyn New York.

A whole different world up there...

But to me...if my rub will take 9th place in New York, I'll take it...

Not bad...for a grouchy old southern hillbilly...

Got the grass cut yesterday and did a few odds and ends around the house.

I'll get the rest done sometime this week...

Cooked a few steaks last night on the Holland grill, (didn't feel like fooling with charcoal) and I have some leg quarters for the Weber grill tonight.



Publix had them both on sale, so I just jumped on that. Also got a case of Tennessee Vols Bud Light bottles that just came out. Julie, is more of a bottle baby than I am, but I'll take it in glass or can, I don't care...just as long as it's cold.



They're fixing to change our work hours again (for the fifth time...) we'll be going to four - ten hours days, which is fine with me, as long as we can get Fridays off. That way, I can do competitions next year without having to take a day off to load in and get set up. If we get Mondays, well I'm screwed, and that would not surprise me one bit.

When it comes to running a sinking ship aground and screwing up every body's life...The luck runs with them and against us.

Go figure...

The Bill of Non-Rights ...



"We the sensible people of the United States, in an attempt to help everyone get along, restore some semblance of justice, avoid more riots, keep our nation safe, promote positive behavior, and secure the blessings of debt free liberty to ourselves and our great-great-great-grandchildren, hereby try one more time to ordain and establish some common sense guidelines for the terminally whiny, guilt ridden, delusional, and other liberal bed-wetters.

And yet, you are given the freedom to believe in any religion, any faith, or no faith at all; with no fear of persecution. The phrase IN GOD WE TRUST is part of our heritage and history, and if you are uncomfortable with it, TOUGH!!!!

Weekend Report...

Long day yesterday...



Fired 'Big Mama' up at 4:30 am and kept her working all day long.

Cooked:
4- Boston butts
1- 7 1/2 lb Brisket
30- Whole chicken wings
6- Sausages
1- Whole stick of Bologna






I did some things different this time. I brought her up to heat with Lump Charcoal, then switched to wood for the rest of the day. Never done that before..



I need to work on the brisket rub recipe, it was just a tad bit salty for my taste.

Butts and brisket cooked for 12 and half hours. Wings, sausage and bologna, 2 hours.

Pit temperature held a steady 250 degrees all day long which kind of surprised me because I thought it would jump around some using wood. She never spiked nor dropped off...

After pulling them off the pit and double wrapping in foil, I put the butts & brisket in a cooler (covered with 2 big thick towels) for some rest time.



This was my second brisket cook. Much better than the first one. Tender & juicy, just need to tweak that rub just a hair. But, I'm on the right track...

Well...got to go clean the pit and have some 'cue for breakfast...

I have never seen lighting that heavy around here in a long time, and I'm talking about some mega-watts of electricity coming down.

The thunder shook the world and the ferocity of the lighting was...in a word...was pretty damn scary.



Not much rain...

But...it was loud as hell. And it got my attention pretty quick...

Well...

I got caught up on some work, but I still have a long way to go before my...

I've just let things get way ahead of me this year because it rained so much at the start of the season...then it got hotter than a horny hooker in a car on Saturday night...Well, you get the picture I'm sure.

OK, maybe not THAT picture...but...you know what I mean.

It was wet and then it was or is...oh never mind...

I'll get caught up maybe sometime next year.
