Weekend Report...



Well... boys & girls, yesterday was a long...long... day. Besides having to get up and go to work, we did a test cook yesterday afternoon for Memphis in May.

I was up at 3:30 am yesterday morning and after work went to Carey's to help out with the test cook. I got home this morning at about 5:30 am. Yes... I was worn out. And I even had to cut grass today, before the rain hits tonight.

What is a test cook? That is where we decided what we're going to do and how long we're going to do it.

Can I tell you what we did?

No...I'm sworn to a secret recipe and secret processes. Sorry...

And no...I didn't take pictures. Can't give away any trade secrets...

Fish...the other white meat.


Somebody asked me, "B.D. what can I do with fish sticks?"

Well...not much of anything, besides slather them with Tartar sauce.

What can you do with the little humble fish stick that has been around for years?

I remember years ago, my mother would fix these little delights with some french fries. The American version of England's fish & chips. The house always smelt so good with fish sticks in the oven and served with fries or mashed potatoes and corn on the cob and maybe a salad.

When TV dinners had fish sticks, they always turned out soggy, never up to snuff compared to the oven made. Yes... I still remember that smell of my mother's kitchen so many years ago.

Our cooking styles have changed over the years...but just think back for a moment and relive that smell...that moment...those memories...

So...what can you do with fish sticks? Here is a very simple recipe, that puts a new twist on the very humble fish stick. I hope you enjoy this, it may become a family favorite.



Fish Stick Fajitas

18 Fish sticks

1 large Onion

3 Bell peppers ( green- red- yellow) sliced and seeded

1 tsp. minced Garlic

a little oil for cooking (whatever you like)

1 packet of Fajita dry seasoning mix

9 Flour Tortilas (warmed up)

Shredded Cheese

Salsa

Sour cream

Guacamole

Salt & pepper to taste

Cook fish stick according to package direcitions. While the sticks are cooking, heat oil in a skillet.

Add Garlic, Onions & Peppers. Stir and cook 5 to 7 minutes or until veggies are tender. Stir in fajita seasoning mix.

Place 2 cooked fish sticks in the middle of a tortila, top with veggie mixture, cheese, salsa, sour cream and guacamole to taste and wrap 'em up.

That's the best I can do...

This & That...



It has been brought to my attention that I have acquired some new readers.

That's great...we always welcome new readers here at the "Grill."

It seems that the fine folks from Tusculum Lanes have come on board. It's always great to have new folks check us out and come back to visit us when ever they can.

It is an honor for me to gain the trust of so many people that become faithful readers and whom stop by everyday to check us out.

I try to provide humor, wisdom, fun, laughter, an insight to our family life, and great workable recipes, be it grilled, barbecued or stove top or oven. I try to provide pictures of everything I cook, because I have worked a lifetime on some of my recipes and I want everybody to be able to enjoy them, just like my family does. The other recipes I post from friends (like Henry) are also as equally good and tried & true.

The main purpose of Macdaddy's Grill is all about the food...

Great food, that can be fixed consistently every time. The "Grill" was born from my passion and enjoyment of grilling and cooking, but something else also entered the mix...my passion for learning the art of making barbecue.

Real barbecue...old style. That has driven me more than anything. It is an art, a love, a passion, a gift, a life time of learning...and it is wonderful.

So...

To the new folks from Tusculum Lanes, welcome to the "Grill."

And to Marcia who asked Julie if I was for rent? If you become a B.D.'s girl, (and that is an exclusive club, by the way) we'll talk darlin'.

My motto is...Life is good...Beer is better...

Weekend Report...




Well... it's time to start experimenting once again.

"Oh no...B.D. what are you fixing to do this time?"

What do you mean? Oh no...

Hey, some very good things have come out of experimenting, but relax...it's fine...trust me.


I bought me a little charcoal grill yesterday so I can start practicing doing my hot wings over coals instead of gas. I'll try charcoal or lump charcoal and of course pecan wood for smoke.

Why am I doing this?

I was going to take my Holland to Memphis in May this year, but instead of lugging it down there and back, I'll do a charcoal grill instead, less room taken up, easier to handle and I'll be cooking on charcoal again for the hot wing competition. So...

I use to cook on charcoal years ago, but it has been awhile...and me being the Jr. fire tender for the team, well...let's just say it wouldn't look right, everybody else cooking with charcoal and me cooking with gas.

So it's time for some practice.

Grilled Hot Wings

Holy Hanna...



Oh, man...the weather is, in a word...Woo-Hoo!!!

Grilled some burgers tonight...(after cutting the rest of the backyard hay field)

Folks...let me tell you...

I don't endorse many products here at the "Grill"...but that Scott's stuff for your lawn... is killer.

It is some good stuff. Those of you that have followed me here over the years, know I love a pretty yard. I take pride in making our home on the outside look nice. But that weed & feed made the grass shoot up like a pocket rocket.

Everything fell into place.

Now...as most of you know, the weather here in Tennessee is never predictable.

The weather gurus have a hard time calling it day by day, the average high this time of year is 63, we hit almost 80 today. That seems to be the norm...from 50's to 80's...just like that.

Does that hurt my feelings? Heck no...I love it. But I didn't think my grass would grow that quick.

Yes...it's a jungle out there...or in my case...a hay field.

Holy Hanna...I'm not ready for this...

Simply Thursday...



Well... grass cutting season is here in Tennessee.

Mine...has turned into a hay field right now.

I put a little weed & feed out a few weeks ago and with the rain and warmer temps. the grass has taken off like a pocket rocket.

It is so thick...it will take more than a day or two to cut it. This weekend is supposed to be...in a word beautiful...Woo-Hoo!!!

I smell ribs in the air this weekend...

It's just Tuesday, I think...



Oh yeah babe...

You know...I have thought about doing another blog called Macdaddy's Grill Recipes.

This site would include every recipe I have ever posted over the years here at Macdaddy's Grill and also would include every recipe I have in my library.

My other blog, i think of you as... (which is a great title by the way) has fallen by the wayside. I just don't have the time to dedicate to it. The Grill is my baby...she is and always will be my number one.

So...i think of you as...may go into the history books. Or maybe not...she is my stepchild.

If I set this up...I'll let you know. It's just a thought...

Hey... give me your opinion. You read this blog everyday.

Weekend Report...


I fixed two beer butt chickens last night and they turned out very well.

I over shot my breast temperature by just a tad but, I let them rest for 10 mins. before pulling the meat. Why did I over shoot the temp.?

Not because I wasn't paying attention. The wind shifted around from the North and picked up just a tad...so instead of just using the two outside burners on the Char-Broil for heat, I had to use all four on low to hold that 325 temp. I knew they would probably come off earlier (15 mins.) so I was watching fairly close. But I did over shoot the breast temp. by 10 degrees.

They still turned out moist and juicy though. And yes...I did take pictures.

And things started like this...



You know... when I started this blog back in May of 2004, it was founded on the format of cooking. And that format still holds true to this day.

Macdaddy's Grill has gone through some major changes through the years, but the format has stayed the same. I try to provide you with great workable recipes that you can fix for your family. I also give you a peek into our family life and the world according to me. I also try to provide humor...something the world is seriously lacking.

First...I must say "Thank you" to everyone that has stopped by the "Grill." And "Thanks" to everyone that has become a faithful reader of this blog. The concept of the Macdaddy's Grill will never change...it is all about the food.

So...

I must also give thanks to my good friend Henry from Louisiana. He has helped me out more than anyone on the art of cooking barbecue. And he has taken the time to send me many, many recipes. What does all this come to? The look of this blog may change from time to time...

But the format never will.

It's all about the food...

Weekend Report


This weekend, I am all by my lonely. Julie is out of town, Robyn is with the in-laws.

Just me & Sweetie. What am I doing? I'm just enjoying the peace & solitude...Am I cooking anything this weekend? Just a roast sometime tomorrow. It is way too windy to cook anything outside.

That will come later this spring. Right now...It's just me & Sweetie & the TV & a few cold beers...

Is that 'Q' I smell?



This is what our team shirts will look like this year for Memphis in May. Sweet...

I can't wait to get down there and start cooking. Folks... let me tell you, there is nothing better, and I mean nothing better, than that smell of barbecue in the air.

The smell will make your mouth water. The 'Q' will make you want to come back year after year. It is a love unmatched by anything other thing in your life. It will get in your blood.


It will stay there...And it is...good.
