Weekend Report...
Well...things did not go well for us (standing wise) we were no where near the top 20. We tried, but it just wasn't in the cards. And, a few things were done that I didn't agree with, but...
I picked up a KCBS application while I was out there. I may join this group and try to go to judging school and maybe start looking at starting my own team for these competitions to get more experience. I'll always be a Peg Leg Porker, but, I was not happy with this at all.
Anyway, here is the bottle and the label...Ta-Da.
I have plenty of pictures to post, thanks to Julie and I'll tell you all about the folks we met, but right now I have to go back and pick up my stuff and load it up.

Simply Thursday...
Basically right now this is what I know about the BBQ competition this weekend.
We will load in and set up this afternoon. We will start cooking around 2:00 pm Friday afternoon and cook all night. The turn in times will start at 12:00 through 2:00 pm Saturday.
The awards will be given out at 5:00 pm Saturday.
Right now, I don't know when they will let the public come in or what it will cost to get in. ( I won't be able to get you into this one, sorry. )
When I find out more about it, I will post the info tonight or Julie will do it for me.
Julie, will also be with me this weekend as our official photographer, so I will have plenty of pictures to post in the coming days.
And now, the fun begins...

This & That...
How true, every time Sweetie sees me put a towel in my back pocket, she comes a runnin' to start sniffing out the ingredients and smell the smoke.
She will darn near knock me down to get out the door first, so she can get a front row seat to supervise the grillin'.
And another thing...
You ain't goin' keep that dog out of the kitchen. You can run her out one end and she will double back through the other end and still won't miss a lick before you run her out again.
And if you drop something on the floor, not to worry...she has the three second rule completely covered. No need for paper towels or a mop, not when my Black bear is around...

Wisdom...
The longest journey begins with a single step...
Life is our journey, we make of it what we will.
It can be a treacherous climb up a mountain side, or a walk on a gentle hill side, or a walk on level ground, enjoying the view as we walk through life.
Or, we can be in such a hurry, we miss everything. We fall off the mountain, we tumble down the hill side, or we stumble over our own feet on level ground missing everything in life because we need glasses to see where we are going.
That's up to you...do you need glasses to see where you are going?
It's just a thought...

Weekend Report...
I fixed a few rib eye steaks tonight on the Char-Broil, along with some jumbo baked potatoes in the oven.
These bad boy steaks were 2 inches in thickness ( killer ) there is no "where's the beef" in this house tonight. It's on my plate.
So...we are about to chow down to some really good home grilled grub.
Wish you were here...
But...you're not...so sorry about your luck.
Just means more beer for me...

Simply Thursday...
Today was a good day, (work sucked...but that's another story)
All of the info is in, we have decided on the bottles and they will be ordered this afternoon. The label design is in the final stages, and should be ready by the time the bottles get here. We have green lights across the board...
First off, I want to thank everybody for their test runs, their feed back, and all the help. We are in the final stages of making this a reality. There are only a small amount of loose ends to take care of and these will be no problem. As it is said..."a walk in the park." We will be ready for market by next week.
Also, I've got to thank Carey & Pat for their help and support. I always know, if I really need some help or advice, I can count on these guys to be there for me and they know that I'll help them in a "New York minute" anytime I can if they call on me for help when they are in a bind. That's what friends do...
And these two butt heads better call me a friend or the the next voice they hear will be my answering machine telling them "sorry about your luck..."
Anyway...
When we have the team meeting, I'll let you know about Opryland so you can come out and see us.

This & That...
We may have found a bottle combo that will work for us as far as packing the rub mix to sell to the public. Jeff is working on that now.
The label design is done and looks awesome, things are starting to come together better everyday and it won't be long now. This is all an entrepreneurial ground floor effort.
Jeff has been great in helping me, he has been my sounding board for ideas and feed back. He has given me a lot of feed back, input, design, research, opinion and honesty. He sees my vision and understands my passion for cooking and wanting to making this the best product out there... That's why I gave it to so many people of different cooking backgrounds for testing.
Jeff has done countless footwork for me. All of this is very, very much appreciated and will not be forgotten by any means. He is fixing to become my marketing manager as soon as we get a workable package to present.
And sales, will all be by word of mouth, because the rub is that good and people that use it or have tried it really like it...a lot.
That's why I want to package it myself, I can insure that the quality and integrity of the rub will be consistent everytime.
The field testing is almost complete, only a few more reports to gather up ( Vicky & Steve) and a few others. After that, we will have a board meeting to finalise our strategy.
Then...
We hit the ground running baby.

Weekend Report (part II)
Tonight, I did some chicken thighs, with my regular spice mix and some with my rub mix. The results were like night and day.
A lot of folks that I gave the rub to, said it was great on chicken. I had not tried it that way yet, so tonight I did...
And they were right, it is awesome on chicken. Julie even said I could fix them that way from now on.
The rub has taken on a life of its own. This stuff is fantastic. I never thought a recipe of mine would come to the forefront as this one has.
I am truly humbled by the positive response generated by this rub. This is killer...not bad for a white boy.
Now, I must work on marketing. This is a once in a lifetime opportunity.
I can't drop the ball on this...
If I do, I'll regret every minute of it.

Weekend Report...
I fixed some ribs today, with smoked beans and Julie fixed some corn bread and mashed potatoes.
Yeah I know...mashed 'taters don't go with ribs, but I wanted some of Julie's famous gravity defying mashed potatoes, so my lovely wife fixed me right up.
That's why I love her...
So, with my belly full...it's time for some much needed R & R.

Simply Thursday...
I got word last night, we are a go for the barbecue competition at Opryland here in Nashville the 28th & 29th of this month.
This is great news, the Peg Leg Porkers ride again baby...
So... to all of my readers of MacDaddy's Grill in the Nashville area, come on out to see us at Opryland and show your support. We would love to see you.
This is what it's all about...
Being with these guys, competing and having loads of fun. This is a super group of guys to be with and we do what we love to do...that's cooking great "Q"

Weekend Report...
Some things are just a racket...Take the cell phone companies for instance.
I have had my phone for maybe three or four years and now I need a new battery. I found out that battery is not made anymore and that I would have to upgrade my phone to the current standards of technology, meaning I would have to be under contract again, get a new phone and so on and so forth...
I like my phone, that's why I've kept it for so long. I don't need a super duper high tech mini computer in my pocket...
I just want a phone that works when I dial the number, is that too much to ask? Plain and simple, no fancy gizmo, a phone that was made to be...a phone.
Well you can text people when you can't call them B.D.
I can do that with this phone...
On the new phones, the key pads are so small my large manly fingers would have a field day trying to dial a number, much less trying to text something.
It's a racket I tell ya'...
Trying to assimilate all of us folks that are technically challenged and stuck in our era of time. Look at what they did to the poor pay phone, chopped it off at the knees in the prime of life.
They killed the 8-track, the cassette, the LP, the 25 in. console TV, Bozo the clown...where will it end...

This & That...
Well...
Tonight was pretty nice, (weather wise) so I did some mustard slathered and rubbed thick cut pork chops on the Char-Broil.
Julie has been a Saint during the hot weather, (cutting me a lot of slack about not grilling) but bless her heart, she has been going through grill withdrawals during that time, so tonight I treated my wife to some grilled grub.
As far as everything else...still no rain, everything is pretty much dead or dying. I will have to replace a lot of landscaping next year. But...that's life.
As far as the pork rub goes, we have developed a business plan and a target group of folks we are going after, we have also decided on the packaging.
I'll fill you in on the details later.
Time for me to do a little R&R... as the story goes, because I have to work tomorrow.
Life is good...
Beer is better...

Simply Thursday...
Well low and behold, I still have test results coming in from the field on the Pork rub.
The test runs were done on:
Ribs
Pork loin
Pork chops
Salmon (grilled & oven baked)
Chicken
Oven baked potatoes
Fajitas
And now...Steak
Ed gave a raving review of the rub and so did Thomas. Ed is like me, loves good food and does big cookouts. Thomas, does big cookouts also for friends and family and told me they are not shy at all about giving thumbs up or thumbs down.
It was thumbs up all around.
Ed said the same thing.
He even took pictures. You go boy...
Now none of these folks are pushovers when it comes to cooking and that's why I did the sampling like I did. The only things that have not been tested are popcorn and ice cream. But that's OK...I'm sure it would do just fine.
There are a few folks left that I haven't gotten feed back from yet because I don't get to see them very often, but they haven't been forgotten and I will get some to them sometime in the near future.
I also have a friend that works for NASCAR that hasn't gotten back to me yet about his test run. So...
We're still working on the marketing and packing aspect of this as well. These things take time. But one things for sure...
I have a home run hit in the making...

Weekend Report...
We hope you're having a great Labor Day Weekend.
You have heard me talk about my girls (B.D.'s girls) well, here they are. We spent most of the day yesterday with all of my lovelies and their husbands.
As I have said a thousand times before, it is always a pleasure to see these lovely ladies. Everybody had a great time being together and they loved the food, but I think one or two may have gotten a bit perturbed at me because I didn't eat.
It's like this...I take care of the masses, you eat-I drink the beer...we're both happy. But not to worry, I took a great doggy bag home to munch on, and I got plenty of banana pudding too.
Oh...love that 'nana pudding.
