I could get use to this being off on Friday, Saturday and Sunday. Working 10 hour days has its moments...but life is a trade off sometimes, you must give something up to get something else in return.
It gives me more time to experiment on cooking during the weekend and enjoy a cold libation or three...as I kick back and relax and forget about work.
Cooking is my therapy...
In return for the 4-10 hour days...I had to make a sacrifice of not bowling with my lovely wife Julie on Wednesday.
So sorry darlin'...
But on another note, I'm already starting to get orders for cooking barbecue to sell.
That's been a goal for a long time. I have the pit. My bro-in-law is going to help put a roof on the trailer to cover the pit and firebox from rain.
Right now...me and 'Big Mama" are at the mercy of Mother Nature.
When some folks wanted me to cook for them, I had to reply, "it depends on the weather." You don't get much business that way.
Word of mouth has worked well for me as people have sampled my 'que and have become interested in placing orders.
I finally came up with a price list and I've got a 90 dollar order for ribs next weekend. Things are slowly falling into place.
Hopefully...I can enter some competitions next year as well and build a reputation as one of the top cooks in local KCBS competitions. In a few years, we'll start going out of state to compete in some contest.
Things are coming together...one step at a time.
