Labor Day Weekend...



I just got through cooking 6 racks of ribs dusted with my rub and I smoked a gallon of baked beans for tomorrow.

I'll get up early in the morning and do some grilled wings for my famous grilled hot wings.

I got elected last week to be Grill Master at this shindig at our friends house, so I'm doing most of it here tonight on my equipment.

That way I can relax tomorrow and have some brews and watch the babes play in the pool...all of my girls will be there as well. Lucky me...

Be safe this weekend, enjoy the food and drink one for me...

Simply Thursday...



Carey, sent me some info on where he has his rub made and bottled. I will have to check this out, because we have hit a brick wall trying to find bottles around here.

What we have found on line is no help.

They want an arm and a leg for shipping. The cost would be figured into the product and make it very costly. I had hopes of doing this myself, but with that kind of cost, it don't look so good.

Unless...

You don't mind buying it in a zip-lock bag... Then I'm your man.

Jeff, has done the label design and it looks great and I have a great product so, we're not giving up on this by any means...we just hit a pothole in the road and may have to change lanes for a smoother ride.

I'll have to call Memphis and see what they can do for me and see how much it will cost, then let Jeff run the numbers and see, is it worth it to me to go this route.

Or...

Stay with Mr. Zip-Lock and just put a label on it and keep the overhead cost very low and pass the savings on to the customers.

We'll see...

Weekend Report...

Well, I'm glad some folks finally got some rain last night...

You didn't B.D.?

Nope, not a drop. I hate to see this months water & electric bills...
I'll have to get two jobs to pay these bad boys, anyway...

B.D. what's with the ego thing posted below?


Well it's like this Jethro...

It's just that some people have an ego problem when it comes to cooking or for anything else for that matter. They have to be in the spot light.
(and I'm not talking about any of the guys on the team or Julie or any of my friends.)

I don't have an ego, if I need help I'll ask for it. I love to cook, I want people to give me their honest opinion about what the food tastes like, do they like it or not.

I tried something someone fixed a while back and didn't really care for it, so that's all I said. By that response, made by me, their ego kicked into high gear.

You would think I'd called their momma a few choice names or something.

"Well I guess you think you're the only one who can cook around here!" I'll have you know that I...yak...yak...yak...

( I didn't say that and you'd better back up off me or you will need your momma.)

Some people, just can't handle the truth, that's why I'm talking about ego.

I don't have one when it come to cooking, I do the best that I can and if I think I can do it better... I'll try. If I screw up, I don't get my feelings hurt, I try again.

That's why I experiment a lot and if you don't like it, I've got the balls to ask you what you think it needs to improve it, or 86 it altogether and start over...that's not ego. That's thinking on your feet and getting the job done.

Simply Friday...

First off...

I got to see all of my girls again last night at Tusculum Lanes bowling alley.

During this visit...I got drafted to grill for the crew next weekend at Marcia's & Hal's house.

No problem...You know the saying, it's not the equipment, it's the cook. (God help me)

I'm supposed to cook for about 20 folks... again no problem. I do what I do and I'm good at what I do.

That's about how many we have when I cook for the whole family.

But some of these folks might be my toughest critics. They do not know my cooking at all. Only word of mouth has put me in this position.

That's cool...I always like a challenge.


On another note...

I... first off have to say a big "Thank you" to Jeff, my head engineer at work.

Jeff is a math machine.

Jeff, has taken the ball and ran with it.

He has helped me more on this mission of getting the rib rub off the ground than anybody. He has broken everything down, crunched the numbers, done research, done the math, showed me figures and he has even designed a label for me.

So I made Jeff, my Chief Officer, my Chief Research Officer, my Head Logo Designer and my most Trusted Adviser and my body guard.

B.D. what about Carey and Pat?

Carey got to try some of the rub and he gave the thumbs up award. Pat hasn't gotten any yet. ( I don't get to see Pat much)

Carey, has his own rub and sauce, which is very good. Pat has his own stuff as well, which is also good.

I wanted my own stuff. In no way would I compete with Carey or Pat. There is no ego on my part involved here. That is just the way it is in the world of barbecue.

Everybody has a signature something, be it rub or sauce. These guys are just a few steps ahead of me.

I came into barbecue late in life. I'm just trying to better myself and my cooking skills and my recipe making skills.

Do I think I'm better than Carey or Pat?

No way...these guys are years ahead of me when it comes to barbecue, but they would do anything to help me out on this journey. That's what I respect about them.

I'm climbing up that barbecue ladder quick and I would never develop an ego when it comes to cooking, it's all about the food... not ego.

I wasn't raised that way...
I was born to cook...
That's what I do...

Weekend Report...



The bumper crop has arrived. The kitchen counter looks like the tomato produce section at the local store. Tomatoes everywhere and not a sandwich in sight...

I worked half a day yesterday and then, went to meet up with one of our team captains Dave for lunch.

(Thanks for buying lunch Dave.)

I was meeting Dave to give him a sample of my rub, then low and behold, the founder of the team (Carey, Mr. Peg Leg himself) also showed up and promptly started raking me over the coals about not giving him any samples to try.

Pat Martin, has already given me a tongue lashing for not giving him any and now Mr. Peg Leg pulls an (Emeril) on me and kicks it up "another notch!"

So anyway, Carey was fixing some ribs for someone that afternoon and since he has seniority, he commandeered the rub from Dave. So, I'll have to fix Dave up again.

And if they don't like it...I'll have to buy lunch next time.

But really...

It's always great to see these guys, they are super fun to be around and are awesome men in character and heart.

And...I know without a doubt, these guys will give me their honest opinion on the rub.

Try to stay cool. It's going to be another scorcher next week too!

It's Friday...Woo-Hoo!!!

To start off on a sad note...

My team mate and my very good friend, Pat Martin has had a death in the family... So all of us here at MacDaddy's Grill, send out our utmost heart felt condolences to Pat and his crew.

Carey, (our founder, Mr. Peg Leg and team captain) has also been through some pain with the recent death of his father. I did not mention this before, I should have, and I apologize to Carey and his family for that. We are saddened by all of these events. Our prayers are with them all.

On a lighter note...

I got to see my girls last night. It is always a pleasure to see these lovely ladies. I also got to see Steve as well, (few and far between visits) he looks great and still has the great sense of humor that I admire and he is always fun to be around. It was good to see him again.

As far as everything else...

It's hot...
It hasn't rained...
Everything is damn near dead...
The ice maker in the fridge is acting up again...

Go figure...

OK...the rub is really starting to take off. I gave out a lot of samples to do the test run and I have gotten very positive opinions, and I have not had one single negative comment.

This... in itself is awesome, my own recipe, and I have people wanting to buy it already. I have been over whelmed by the response, now it's time to think about price...

I have this covered...I have my best man working on it...

It's all about team work.
I'm working on my team right now.

I'm taking things to the next level.

Weekend Report...



Having to water the tomato plants, almost everyday now... we are about to be overwhelmed with a bumper crop of the red stuff. We've had some good ones so far, but these babies are about to kick into high gear and cash in their bounty and overtake my kitchen counters.

Everything else though, has keeled over or is about too. No rain for us at all, and the oppressive heat won't let up neither. Put it this way...if I'm not grilling...it's hot.

Of course today is only supposed to be 96 (I think) so since I haven't grilled in over a week and a half, I told Julie I would grill her some pork chops.

B.D. you haven't grilled in that long and you're going to grill Julie pork chops instead of chicken?

Yep...it's the other white meat. Besides, I'm doing these on the Char-Broil grill, throw them on...take them off...done.

On another note...

One of Blondie's friends, sent her an email about this site. She said, "I went to MacDaddy's or Bigdaddy's or whose ever daddy's site and love the music, I listen to it now instead of the radio. I'll have to check out some of the recipes."

OK...should I be insulted because, she doesn't know the true name of this site, or she doesn't know my nick name, (which everyone in the family has, including the dog by the way) or should I just re-name this site Who's your daddy?...Not me...

Nah...I'm thrilled folks check us out. My play list has about 73 songs on it. I change them from time to time and I do the same thing, I just minimize the site and let her play while I surf the web or look at other things or do other things.

Me insulted, nah...it started out like this, first, Daddykins then Macdaddy then Bigdaddy then Bigdaddy grouch then back to Bigdaddy and now I'm whose ever daddy.

Blondie, next time tell them who I really am so that they will not be so in tangled in the web of monikers and nick names that this poor lowly white boy has.

Weekend Report...





Today, I have to do some work on the driveway as we are having it and the sidewalk sealed Sunday. My patio has a Grand Canyon size crack running through it. It will have to be replaced next spring. I'm not going to worry about it this year.

I have to have the deck re-done as well, so I'll just do them both next spring.We have not had any rain at all, the yard is shot, the ground is so dry, it is pulling away from the concrete. Anyway...

It has been so hot these last weeks, I haven't cooked much or grilled much. But... I may start working on the sauce this weekend. The rub is a hit, I used it on ribs, Jeff used it on chicken, and another one of the guys is going to try it on catfish. The final test will be on the in-laws, they know my cooking better than anybody, they will be the final judges.

I already know what my vinegar sauce is going to be, I just need to work on a tomato based sauce. I have three basic ways I am going to do this, one will be Ketchup based, one will be tomato puree based, and one will be crushed tomato based.

This will give three different bases in which I will build on, then I will pick the best one. We'll see what happens.

Test run on the grilled hot wings...



OK... I did a test run on a different marinade for the grilled hot wings...

Julie liked it, and they were good, but to me, it was not up to competition standards.

So...I will stick with the original recipe. The different marinade works on beer butt chicken very well...but not on the wings. That's just my opinion...

So...

No harm...no foul...

You try and figure out what you have to do better and can you improve upon that. I'll stick with the 7th place recipe...

That's the ticket to winning next year. I can't improve it...I just have to nail it.
