Simply Tuesday...

OK...technically, it's not Tuesday (by this post) but I have things going on tomorrow and I doubt if I will have time to get on the computer, so I'll do this today.



Tuesday, is a B-day for one of my original B.D. girls...Vicky.

I am sworn to secrecy about her age (by threat of death) so I will just say "Happy B-Day" darlin'

Hey...I ain't stupid enough to reveal a woman's age, bra size...maybe.

But that will cost ya' a few beers...Happy B-Day Vicky!!!

This & That...



Why do things have to be be so frigging complicated, why can't things be simple...is that asking too much?

For instance...retiring. Why can't you fill out just one paper instead of 15?
Why do you have to produce every legal document known to man? (some I've never heard of)

I need 5 documents to prove my identity, thanks to the bone heads in government and documents proving I'm married, but a marriage license won't work, it must be a marriage certificate. What's the frigging difference you bone heads I'm married...

I was born in this country and I need 5 forms of ID?

Here...I've got an ID for ya'... (knowing me...use your imagination)

Oh...and by the way...you have two days to get it done. What?? Kiss my ...

Weekend Report...

Well, we have come to the end of the road on a long and bumpy journey with a career with Ford Motor Co. As of May 1st, I am forced into retirement and 31 years of service comes to an end.

Life goes on...

I will not express (here) how I feel, but I will say, I'm not happy by any meaning of the word.

I'll survive and move on to greater things on the next road I travel. When you reach middle age and things start changing (that you can't control) it gets frustrating...

Believe me when I say...I have been frustrated for well over a year and I haven't been bashful about it at all.



To put it bluntly...I've been a bitch.

My calm & cool & laid back demeanor has given way to full fledged PMS. If looks could kill...half the world would be dead right now.

Life goes on...

I'll fill up the gas tank and take a new road and see were it takes me in life...

Simply Thursday...



I had to cut the yard when I got home from work, so Julie took over the kitchen tonight and fixed a Pork Chop Potato Bake Casserole.

Not a best effort...

Not because she screwed anything up, she followed the recipe, but the recipe could use some tweaks. That's the thing about it...everybody has a recipe. You have to learn how to read one and see if it will work.

Now...by no fault on her part, she did what it said to do and it looked good even to me...but it needs work.

It is a workable recipe and should be put back in the rotation for another try. But Julie gets a little bent, when things she tries don't come out well. She thinks it disappoints me because it's not up to the caliber of my cooking.

She is a good cook and she's not afraid to try something, but if it doesn't work the first time, she writes it off...

If I did that...

I would still be eating peanut butter & jelly sandwiches for dinner...

Keep the faith babe and never give up...(on a recipe, that is...)

(I was forced under dourest and against my will to say that) by my sister-in-law Blondie on his site...so I just thought I would re-post them here.

I was pretty busy and didn't have time to take any pictures.

All kidding aside...

I love my Blondie... why?
I don't have a clue.

She can be, the most...

Well...let's just say, she can be a hand full or an ear full or a real pain in the wazoo sometimes...

But Blondie has a heart of gold...maybe that's why I love her.








I'll probably get some grief about this, but if I didn't bad mouth her or rag her or aggravate her...

She would think I didn't love her anymore...

Weekend Report...



What a weekend...

Big Mama came to life yesterday, as I went out and started charcoal at 4:30 in the morning. She was ready to go by 6:30.

It had rained Friday night and things were just a tad bit damp, but we overcame that and marched forward into the daylight.

The Boston butts went on first, then the chicken, then the beef short ribs and finally the pork ribs. I played with Big Mama just to see how fast or slow she would react and what the out come would be if I did this or if I did that...

You must know your cooker backwards and forwards, the little tricks, the relationship every pit master makes with his or her cooker is very important.

Big Mama will serve me well at bulk cooking, but at competitions...that might not work...here's why.

About midway through the cook yesterday, it began to rain...(twice)

I covered the charcoal and wood, but it rained just steady enough to start cooling off the firebox, which in turn started cooling off the cooker. That put me behind by a good hour and a half...if not two.

That won't work...

Everything came out good in the end, but at competitions, I don't have that luxury of being good or late...it must be excellent and on time. So unless some major work is done to the trailer, she won't see competitions anymore...

The family chowed down well last night...
(Mishy, Granny, Dale, Tommy, Honey, Blondie, Tootie and me...Big Daddy)

So...not bad for a first time fire up. I need to do some fine tuning on Big Mama, but she and I will become best friends...

Well... I've got to go clean up my mess from yesterday.

Oh...and Sweetie was simply beside herself because she could smell the smoke...she just couldn't find me...

Simply Thursday...



Well...The jacks got welded on the bbq pit tonight (Big Mama), and she is leveled up and good to go. I can't wait to fire her up, hopefully, that will be this weekend.

Everything is in place...finally, now comes the fun part. Cooking...

As I have proclaimed before...and many times since...I'm a junkie with an addiction.

I have to have my Q...



But tonight...You guessed it...chicken...in the oven. The only consolation was...it had the rub on it.

Simply Tuesday...



Well hopefully, Thursday will be the day that the jacks get welded on the trailer.

That is the only thing keeping me from doing test cooks...well...that and the weather. But it should come together here soon and I'm ready to go.



I am so ready to do this...to get this show on the road. It has been killing me to test cook and try new things. I'm like a junkie with an addiction...

I've got to feed the need for Q. I'm like Julie, when I don't grill for her, she has grill withdrawal...if I don't do Q...so do I.

Things may fall into place this weekend.

Weekend Report...



Everything takes twice as long as you plan for and produces results about half as good as you hoped. There’s no reason to be downhearted about this. Just allow for it and move on.

You either get washed out of your shorts or you get blown out of them.

Here a day or two ago with torrential downpours of rain, to yesterdays gusty winds that changed direction so quick sometimes it was hard to do anything except hold on to something and pray.

It makes it tough on a backyard grill master exposed to the elements. I could shoot myself for not thinking about that when this house was being built. I was thinking of room and space, not thinking about getting drowned by rain or blown away by Mr. Breeze.

That's something I need to work on...

Needless to say, the weekend weather has not been kind to me...



Today, is going to be cloudy and cold again, with a chance of frost tonight.

You just gotta love or hate Tennessee weather. As the saying goes, "just hang around awhile... it'll change."

Simply Thursday...

The weather...is not cooperating at all.

It is windy or raining or it just plain sucks...

So...indoor cooking comes into play. And what would that be?

Yep...you guessed it...chicken in the oven.



Julie loves chicken and that's cool, I do too and I love my wife...but I am so sick of cooking it that I might just forget how to cook it...

Brain fart in overdrive...

If all I ever cook is one thing...I forget everything else...

I'm really wanting to cook some barbecue. Good smoked 'Q'...the real deal. I want so much to fire this pit up, that my brain and my blood smells smoke and my taste buds are crying out...feed me.

Now...I love Julie more than anything in this world and I want to make her happy and keep her happy.

But, I am sick of chicken, anyway I dice it or slice it or cook it or...whatever.

Show me some pork baby...

Aaahhh...a rack of ribs...some cold refreshments...

Simply Tuesday...

I said awhile back that I sold a gallon of BBQ sauce to a guy that has a catering business. Well.. I got the feedback today... and it was... everybody loved it.



And to top that off...my sauce was tried by a couple of professional chefs...and they thought it was awesome.

That in itself...is gold to me...I couldn't ask for anything better in my wildest dreams, than to have these folks say...I have awesome stuff.

That is a big time confidence booster on my part...and proves that I can compete with the big boys. I'm coming...one step at a time.

Below, are the beef short ribs, covered in the rub only. I cooked them to an internal temperature of 150. Next time, I will take them up to 155 or 160, just to see what happens. They were tender and moist, but they could go to the next level.

I'm almost there...

These things can become addictive...

Weekend Report...



Last night was so great, it was awesome. We have a friend that plays bass for Mark Wills get us backstage.

And not only being backstage, we got to hang out on stage and watch all of the stars play and we met a lot of fine folks.

That was truly a awesome experience. To see all of these folks in person for the first time and they were great folks and very friendly. I'm not a big country music fan, but to do this and meet these folks helped me relax and be a part of this world again.

Something I really needed.

This & That...



You know...

I started this blog back in May 2004.

My intent...was to talk about my new adventures into the world of barbecue and cooking as a whole. I have...as well as this blog, have come a long way since that time.

I have to say...I appreciate all of you that have followed me through out the years.



I love doing this...

I try to be funny...

I try to give you a peek into our family life, I try to give you great info about things and I just try to be me.

I may rant and rave and bitch about things, but you see the real me...

I'm honest about everything I say, I have a good heart and I'm not bashful about throwing my two cents out there about my opinion on things.

The Grill is my baby...

She will always be mine...

If I ever offend you as a reader in anyway at anytime...I'm sorry. The Grill was never meant for that.

But...I have to be me. I may rub you the wrong way sometime and you might not agree with me on some things, but at the end of day...

You know...

Holidays or calendar days, just don't seem to mean the same thing they did years ago. Is it because we're older and really don't give a rat's ass anymore? I don't know...

It's just another day in my book...

April fools'? Is that a National joke day? The joke may be on you...

You could be an idiot and not know it, you could be the brunt of the water cooler gossip and be the lovable fool of the office at the same time, or...

You could just be you...

And laugh with the rest of the idiots that are totally clueless and brain dead and a waste of time and energy that try and be in the upper echelons of society that turn their nose up at every underling beneath their so called Lordship status in their own twisted mind...

Or...

You could just say...

April fools, you dimwitted sorry excuse of a waste of my time ego maniac pile of fly poop...
